VISTA VINO is your next date night option right here in Castle Rock! 🍷 Under new ownership, Vista Vino is Castle Rock’s upscale Italian restaurant with both classic and modern options, with some unique spins!

🍷 The wine and drink list are extensive, offering something for everyone (plus half off bottles on Thursdays!)

🥖House focaccia pairs wonderfully with rich olive oil and balsamic, or an array of appetizers, like the burrata! The burrata also comes with panzanella, which feeds a crowd!

🥗 The spinach salad is a great starter, with feta, bacon, and strawberries…it was so full of flavor, I could eat 3 more of these 😍

🥩 Let’s talk about this steak special, because WOW 🤩 It was a coffee-crusted ribeye (sourced from Salt Meat Market) that came with a red wine reduction sauce plus brussel sprouts and potatoes. The coffee crust was so unique (not overpowering) and the red wine sauce was incredible, we wanted to dip everything in it!

🍝 The bison bolognese parpadelle was a perfect example of why you let the pros make the classics. The noodles had great texture and the sauce had perfect flavor. The Colorado-sourced bison was a plus.

🕯️ I loved the homey atmosphere. Vista Vino isn’t a huge establishment, so I felt like we were invited into someone’s home, to a private dinner party. The service was wonderful, and the owner even brought by his homemade limoncello to wrap up our meal 🍋

I’m excited about what’s to come at Vista Vino! The owners have 20 years of international experience opening restaurants, so they know flavor and ingredients better than anyone. They are also CO natives, so they know how to source the good stuff! Watch as they roll out new specials, update the interior, and become one of the hottest spots downtown 🧡
